This will set up a proxy for your API requests in Vite. The proxy object specifies the URL path to proxy and the target URL to proxy to. The changeOrigin option is set to true to ensure that the origin of the request is changed to the target URL. The rewrite function is used to remove the /api prefix from the URL path.
