Creamy Chickpea Carrot Spaghetti - Quick & Healthy Dinner
(serves 1-2)

1 large carrot
1 zucchini
1/2 cup chickpeas
1 cup of mushrooms
1 small purple onion
3 tsp chickpea flour
2 tsp nutritional yeast flakes
1/2 cup plant-based milk or vegetable broth
Spices: 1 dash white pepper, 1/2 tsp garlic granules, dash of paprika, 1 tsp dried coriander, salt & pepper to taste, touch of Rosemary
Optional: Eggplants for added flavor

1. Spiralize the carrot using a spiralizer or a peeler, creating thin and curly carrot noodles.
2. In a pan over medium heat, sauté chopped onions, mushrooms, zucchini, and any other preferred vegetables until browned and softened.
3. Add white pepper, garlic granules, paprika, coriander, salt, pepper, and Rosemary to the veggies. Stir to coat evenly.
4. Introduce chickpeas to the mix, allowing them to brown slightly.
5. In a jar, combine chickpea flour, nutritional yeast flakes, and plant-based milk. Shake well to create a creamy sauce.
6. Pour the sauce into the pan with the veggies, stirring continuously until the sauce thickens.
7. Adjust the sauce consistency by adding more liquid if desired.
8. Serve the creamy chickpea sauce over the raw carrot spaghetti or mix it through for a warm dish.
9. Enjoy this quick, healthy, and protein-packed dinner bursting with flavors!
